...and I've found some pretty good recipes on line.   I thought I'd share this one I just made yesterday.


CREAM OF BROCCOLI SOUP  (serves 3)

Ingredients:

1 Tbs butter
1/2 vadalia onion, chopped
1/2 stalk celery, chopped
1-1/2 c. chicken broth
4 c. broccoli florets (I use fresh)

1 Tbs and 1-1/2 tsp butter
1 Tbs and 1-1/2 tsp all purpose flour
1 c. milk
ground black pepper to taste


Directions:

Melt 1 Tbs butter in medium sized stock pot and saute onion and celery until tender.

Add broccoli and broth, cover and simmer for 20 minutes.  Remove from heat.  Gently mash with a potato masher (or puree in blender if you don't like chunks of broccoli) and return to heat.

In a small saucepan, over medium heat, melt 1 Tbs and 1-1/2 tsp butter.  Stir in flour and add milk.  Stir until thick and bubbly and add to soup.  Season with pepper and serve.

If you'd like you can even crumble in a few slices of cooked bacon for added flavor.
